Ingredients
- 200 g boneless, skinless chicken breast, sliced
- 1 3/4 cups rice, cooked
- 1/2 cup oil
- 1/4 cup light soy sauce
- 4 eggs Whole
- 1 pinch salt
- 1 oz spring onion
- 150g mixed vegetable
Instructions
- Heat a wok for 5 minutes over medium-high heat.
- Add oil then stir in all eggs and saute until cooked. Remove and set aside once cooked.
- Now on the preheated wok add some oil and stir in the chicken breast and fry until cooked.
- Add the cooked rice and keep frying until slightly brown.
- Now add the vegetables and saute everything together until fully cooked.
- Pour in the soy sauce and keep stirring.
- Next step is to add the cooked eggs and toss them together.
- Add in the scallions or spring onions and serve hot.
