  • Almond or coconut flour
  • Egg, beaten
  • Celery stalk, trimmed and finely diced
  • Green onion, finely chopped
  • Onion powder

  • Mayonnaise (you can also try cream cheese, parmesan cheese or blue cheese crumbles)
  • Ground black pepper
  • Pink sea salt
  • Buffalo wing sauce or hot pepper sauce

  1. Combine all the ingredients except the buffalo sauce in a large bowl.
  2. Form meatballs with the mixture. Line them on a baking sheet and bake for 15-20 minutes or until cooked and internal temperature reaches 165.
  3. Once baked, place them on a pot or skillet, pour the sauce over them and cook for a few minutes on medium-low heat until the sauce starts to boil and all the meatballs are well coated.
  4. Serve hot immediately.

  • 1 pound chicken, grounded
  • 1 cup buffalo wing sauce
  • 1 egg, beaten
  • 1 tablespoon almond flour or coconut flour
  • 2 sprigs of green onion, finely chopped
  • 1 celery stalk, trimmed and finely diced
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tablespoon mayonnaise
  • 1 tsp ground black pepper
  • 1 tsp pink sea salt
  • Cooking spray

Instructions

  1. Preheat the oven to 400 degrees.
  2. Lightly grease the sheet pan with cooking spray or with olive oil or butter.
  3. Take a large bowl, combine ground chicken, mayonnaise, garlic powder, onion powder, diced celery, chopped onion, salt, and pepper. Mix well until well combined.
  4. Use an ice scoop or your hands to form balls (about 2″) from the meat mixture. (dust your palms with little flour if it's too sticky).
  5. Place them on a sheet pan and bake for about 15-20 minutes or until the internal temperature reaches 165 (check using a meat thermometer).
  6. Remove from the oven and set aside.
  7. Heat a skillet over medium heat. Add the meatballs, pour in the buffalo wing sauce, coat well the sauce and cook until sauce is warmed through.
  8. Done! Garnish with chopped green onions and serve hot with a drizzle of ranch dressing or over pureed cauliflower mixed with ranch seasoning.
