  • Use organic chicken breasts or lean ground chicken, you can also substitute it with ground beef or turkey.
  • I am using rotisserie chicken (it helps me save time) but you can also use any leftover turkey meat.
  • To make a rich flavorful chicken lasagna alfredo sauce, you can use any store-bought sauce or make your own at home.
  • Try to add fresh minced garlic for extra flavors.
  • I recommend you to use full-fat mozzarella cheese instead of non-fat, because full fat brings some extra cheesiness and texture. Also, add some extra parmesan if desired.

  • Slicing Technique – Let the lasagna come under room temperature (slightly warm) or up to 30 minutes, before slicing.
  • Always use a sharp knife and make sure that you slice completely through the very bottom. And use a spatula to lift the cut slice.
  • This recipe is a standalone meal but you can serve it with some garlic bread or a bowl of green salad.

How To Freeze This Homemade Chicken Alfredo Lasagna?

Let the lasagna completely cool to room temperature, wrap it tightly with plastic wrap, then with aluminum foil and freeze for up to 3-4 months without any problem.

When ready to reheat, thaw overnight in the refrigerator, add extra cheese to bring it extra cheesiness and bake for 30 minutes at 350˚F on the top rack.

If you are looking to freeze the unbaked lasagna, assemble it as directed, wrap it with plastic wrap and aluminum foil and freeze for up to 3-4 months.

When ready to bake, thaw it overnight, place it on the middle rack and bake for about 30-40 minutes at 350˚F.

Ingredients

  • 3 cups shredded rotisserie chicken
  • 15 cooked lasagna noodles
  • 3 cups shredded mozzarella cheese
  • 2 tablespoons butter, unsalted
  • 10 ounces fresh baby spinach
  • 1 cup onion, chopped
  • 2 garlic cloves, minced
  • 4 cups heavy cream
  • 15 ounces ricotta cheese
  • 1 1/2 cup grated parmesan cheese
  • 1 1/2 teaspoons salt
  • 1/4 teaspoons black pepper

Instructions

  1. Heat a large skillet over medium high heat, add 2 tbsp of butter, once melted, add minced garlic and chopped onion.
  2. Saute for few minutes or until the onion becomes translucent.
  3. Add spinach and stir until slightly wilted.
  4. Add heavy cream, ricotta cheese, grated parmesan, shredded rotisserie chicken, black pepper, and salt.
  5. Bring it to a simmer and immediately remove from the heat.
  6. Lightly grease a 9 x 13 inch deep baking dish with cooking spray or brush it with little oil. Add a large spoon of the chicken mixture to the bottom of the pan, then add cooked lasagna noodles. (mine was about 5 but it depends on the size the dish)
  7. Again add the chicken Alfredo mixture on top of the noodles and sprinkle shredded mozzarella cheese (about 1/3)
  8. Now repeat the same, layer the lasagna noodles, add chicken Alfredo, then sprinkle with shredded mozzarella or until all of your lasagna noodles are assembled.
  9. Cover the lasagna with foil and bake for about 35-35 minutes at 350˚F.
  10. Uncover and broil for 2-3 minutes uncovered to brown the cheese.
