Chicken – For these types of gravy fishes, try to use skin on bone-in chicken thighs to get the most of flavorful chicken. They need some extra time to cook but believe me, it’s worth it! Instead, boneless skinless chicken thighs or breasts can also be used as they also cook much faster but will not hold that flavorful juice.

Seasoning – You can use ranch seasoning or smoked paprika, or season the chicken with Creole Seasoning, garlic powder, salt and pepper.

Temperature – It’s always recommended to use an instant-read meat thermometer to test your chicken for doneness because we can cook the chicken if it’s not fully cooked after checking on the meat thermometer. And, if it’s overcooked we cannot undo that and the chicken will become dry and rubbery like texture while chewing.

Cream – I am using heavy whipping cream, for dairy-free version, use non-dairy milk or cornstarch slurry to thicken the sauce as per your liking.

Herbs – Fresh herbs always taste better and add a fresh flavor. If fresh herbs are not available in hand, add dried herbs instead.

Ingredients

  • 1/2 teaspoon ground thyme, fresh or dried
  • 1 teaspoon Creole Seasoning (or smoked paprika)
  • 1 teaspoon garlic powder
  • salt and pepper to taste
  • 2 pounds chicken thighs, skin-on, bone-in
  • 1 teaspoon olive oil
  • 2 tablespoons butter, unsalted
  • 1/3 cup heavy whipping cream
  • 1 cup white onion, sliced
  • 1/3 cup chicken broth

Instructions

  1. Preheat oven to 350 degrees.
  2. Wash and pat dry the chicken thighs with paper towel. Season with thyme, garlic powder, seasoning, salt and pepper.
  3. Heat a skillet over medium-high heat. Add olive oil then add the chicken thighs.
    Sear cook for 2 minutes on each side of the chicken. Make sure to not cook the chicken completely as we bake it later.
  4. Remove the seared chicken and set it aside.
  5. Add butter to the pan, deglaze, and scrap up those flavorful brown bits from the bottom of the pan using a wooden spatula.
  6. Add the sliced onions and cook until translucent and fragrant.
  7. Reduce heat to medium-low.
  8. Pour in the chicken broth along with heavy cream. Stir to combine for about 2-3 minutes and do not allow the sauce to boil.
  9. Place the chicken thighs in the pan. Place the skillet in the oven and bake for about 20-25 minutes.
  10. Check on the internal temperature of the chicken for at least 165 degrees by using a meat thermometer.
  11. Remove from the oven and cool down before serving.
