This easy low carb keto chicken cacciatore is full of Italian flavors loaded with tender, juicy chicken thighs, tomatoes, fish sauce, shallots, and other ingredients. This can be made in a slow cooker, instant pot or even in a large pan.

Easy Keto Chicken Cacciatore
– 4 large chicken thighs, skinless – 2 tbsp olive oil – 2 tbsp shallots, chopped – 1 clove garlic, sliced – 2 tbsp tomato puree – 1 large tomato, diced – 1 cup chicken stock, hot
– 1 tbsp rice vinegar – 1 tsp oregano, dried – 1 tsp thyme, dried – 4 anchovy fillets or fish sauce – 2 tbsp basil, chopped – ½ teaspoon salt – ¼ tsp black pepper – ¾ cup black olives
Heat a large pan over medium-high heat. Add a tablespoon of olive oil. Add the chicken thighs cook for few minutes until nicely brown. Transfer to a plate and set aside.
Add the remaining oil and saute the diced shallots and garlic. Add the anchovy fillets and stir until melted. Add thyme, oregano, tomato puree, diced tomato, and vinegar. Stir all together until well combined.
Add the chicken pieces back to the pan and stir to coat with the sauce. Add the chicken stock and stir well. Bring the sauce to the boil and simmer for 30 minutes on low heat.
After its done cooking, stir in the olives and cook for another 15 minutes until the sauce thickens and the chicken is fully cooked through. Garnish with fresh basil and serve over zucchini noodles or a bed of cauliflower rice.
If you don’t have chicken thighs, you can easily replace them with chicken breast. If you prefer a thicker stew, then after it's done cooking, stir in xanthan gum and cook for another 4-5 minutes or until it thickens. If you don’t want to garnish with basil at the end then add the basil into the pan when adding spices.
Yes, you can do both! Either make the recipe as instructed above, store it in an airtight container and put it into the refrigerator. When ready to eat, reheat in the stovetop or microwave. Or you can make the veggies and store in the refrigerator, when ready to make throw them along with chicken into the slow cooker.
I like to serve this with cauliflower rice or over zucchini noodles or alongside a healthy salad. You can also serve this alongside roasted radishes, roasted broccoli, brussels sprouts or keto garlic bread.
