This low carb keto chicken cordon bleu is one of the best chicken recipes you will ever make on your keto journey. It consists of juicy chicken breasts, swiss cheese, ham, coated with pork rinds crumbs and served with an amazing low carb sauce.

STEP1

Pound the chicken breasts with a pounder until they are about 1/4 inch thick. Season with salt and pepper on both sides. Take each chicken breast at a time, place two slices of swiss cheese then a slice of ham, and then again two more swiss cheese slices.

Tightly fold the chicken breast and place the wrapped slide down on until it stays in its shape. Refrigerate for 15-30 minutes (optional) In a shallow bowl, add pork rinds, garlic, and onion powder and combine well. In another bowl, beat the egg and whisk with a fork.

First, dip the folded chicken breast into the egg mixture bowl then to the pork rinds bowl. Do the same for the remaining chicken pieces. Heat a skillet over medium-high heat, add 1/2 inch of oil. Once hot, add the breaded chicken breasts and fry for 8-10 minutes or until brown on all sides, flipping halfway through.

Remove each chicken breast and place it on a paper towel-lined plate. Let's make the sauce - combine all the sauce ingredients in a small bowl and mix well. Heat a pan, add the mixture and stir. Add salt and pepper, bring the sauce to a boil and simmer for 5 to 10 minutes, or until the sauce thickens. Slice each chicken breast into 4 pieces and top with the sauce and served it with roasted broccoli or mashed cauliflower.

Ingedients Substitue

Ham – I am using sliced ham but instead you can use prosciutto (you will love this) Pork rinds – This is one of the best breading options on keto or low carb diet, but instead use half almond flour and half parmesan cheese. Swiss Cheese – This gives you the classic cordon blue recipe but instead use muenster cheese or mozzarella.

What To Serve

I like to serve it with a side of lettuce leaves, spinach and cherry tomatoes as a salad with ranch dressing. You can also enjoy it with roasted asparagus, mashed cauliflower, roasted or steamed broccoli.
