Let’s get started
Easy Keto Chicken Tortilla Soup
– 1 pound chicken thighs, boneless, skinless – 1 teaspoon dried basil – 1 teaspoon garlic powder – 1 teaspoon dried thyme – 3/4 cup grated parmesan cheese, divided – zest of 1/2 lemon – salt and fresh ground pepper, to taste
– 2 tablespoons butter, divided – 1 tablespoon extra virgin olive oil – 3 cloves garlic, minced – 2/3 cup chicken broth, low sodium – 1 cup heavy cream – 2 tablespoons lemon juice, (or as per your taste) For garnishing – Fresh parsley, chopped – Lemon slices
Ingredients
In a bowl combine basil, thyme, garlic powder, lemon zest, 1/3-cup parmesan cheese, salt, and pepper. Mix well. Take another bowl, add little olive oil and the seasoning, mix them. Add the chicken pieces to the bowl and rub the seasoning all around the chicken.
Heat a large skillet over medium-high heat; add oil, 1 tablespoon butter. Once hot, add the chicken and sear for about 5 minutes until golden. Flip the chicken and cook for 5 more minutes. Remove chicken from the skillet. Set aside.
Melt the remaining butter. Add garlic, lower the heat to medium and cook for 15-20 seconds Pour in the chicken broth, cream, and the remaining Parmesan cheese. Whisk well.
Add the chicken broth into the pan, bring to a boil. Reduce the heat and simmer. Cut the chicken into small bite-size cubes and put it back to the pan along with butter. Simmer for 15 minutes.
Season with more salt and pepper, if desired, and stir to combine. Cook for 2-3 minutes, or until the sauce thickened. Add in the lemon juice and cook for another 1 minute.
Return the chicken into the skillet and simmer with the sauce for 2 to 3 minutes or until heated through. Done! Garnish with chopped parsley and lemon slices. Serve hot.
The sauce is my favorite part! You will only need a few ingredients and your flavorful sauce will be ready – You will need some seasonings, garlic, chicken broth, lemon juice, and heavy cream.
I have used chicken thighs but you can use chicken tenders or chicken breast. (Chicken thighs are recommended because they will turn out more juicy) Store the leftovers - Pack them in an airtight container and store in the refrigerator for up to 4-5 days.
I love to serve this with roasted green beans or steamed broccoli on the side, but my loaded cauliflower casserole is tasty too!
