What is Chicken Sinigang?

Sinigang, literally meaning “to sour” in Tagalog, is a cornerstone of Filipino cuisine. It is a classic rendition featuring tender chicken pieces simmered in a tamarind-infused broth, brimming with vibrant vegetables like okra, string beans, and radish. The distinct sourness comes from tamarind, guava, or other souring agents, creating a flavor profile that’s both healthy and comforting.

Chicken Sinigang – Tips

Souring agent – Tamarind is the classic choice, but guava, calamansi, or even unripe mangoes can be used for exciting variations.

Simmering is key – Simmering the chicken slowly allows the flavors to meld and develop depth.

Adjust the sourness – Taste your broth as you go. Don’t be shy to add more souring agent or a touch of sweetness with sugar to achieve your perfect balance.

Don’t overcook the vegetables – They should be crisp-tender, not mushy. Add them towards the end of cooking.
