Ingredients

  • 2 chicken breasts, halved lengthwise (make 4 pieces)
  • 1/3 cup grated Parmesan cheese
  • 1 cup milk
  • 1 1/2 cups breadcrumbs, Italian seasoned
  • 1/4 cup flour
  • 1/2 cup chicken stock, low-sodium
  • 1 1/2 cups heavy cream
  • 10 oz. fettuccine
  • 3 tablespoons butter
  • 3 minced garlic cloves
  • 2 tablespoons flour
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 cup Asiago cheese
  • freshly chopped parsley

Instructions

  1. Make the fettuccine as per the package instructions. Drain and set aside.
  2. Take a shallow dish, and add breadcrumbs, parmesan, and flour.
  3. In another dish, add the milk.
  4. Firstly, dredge the chicken into the breadcrumb mixture, then into the milk, then again into the breadcrumb bowl.
  5. Repeat the same for the remaining chicken breasts.
  6. Heat a skillet over medium-high heat, add oil, once hot, add the chicken and cook for about 4-5 minutes per side or until golden brown.
  7. Remove and place on the paper towel-lined plate. Fry the remaining chicken pieces.
  8. Clean the skillet, and add butter, once melted. Add the garlic and cook for about 1 minute or until fragrant.
  9. Add in flour and cook for another minute. Pour in chicken stock and stir cook until thickened.
  10. Stir in salt pepper and stir, add in heavy cream, and simmer for about 2-3 minutes until thickened.
  11. Add asiago cheese and cooked fettuccine. Stir until well coated with the sauce.
  12. Serve the cooked pasta over serving plate. Add the fried chicken breasts, top with freshly chopped parsley, and enjoy immediately.
