Chicken Alfredo with Bacon – This chicken and bacon alfredo pasta made under 25 minutes is a great family cum kid friendly dinner that comes with delicious alfredo sauce, sun-dried tomato, shredded chicken and of course smoky bacon.

Chicken Alfredo Bacon – Important Tips

  • For the bacon, you can use Applewood Smoked Bacon or any type you have in hand.
  • I am using double cream but you can substitute heavy whipping cream instead.
  • If you don’t want to use heavy cream then use half and half and if that is also not available simply mix half double cream or heavy cream and half whole milk.
  • To make it more healthy and stomach filling meal, add mushrooms and broccoli or spinach if you want. Saute them with bacon and tomatoes or as instructed below.

  • Always do a salt test before adding any extra salt seasonings because Bacon, tomatoes, and parmesan have already salt in it.
  • To reduce extra calories from the cheese, reduce it to 1/4 cup and add a tablespoon of flour to thicken the sauce.
  • If you don’t want to use bacon, that’s fine, add shallots instead, brown them and you are good to go.
  • Serve it right away or at least it is slightly warm to enjoy the flavors, especially the sauce.

What to do with the leftovers?

You can store any leftovers in the fridge for upto 3-4 days, when ready to heat, add a little splash of milk and microwave until warmed through.

And regarding freezing, I simply don’t recommend to freeze this particular recipe or any type of creamy pasta dishes.

This chicken alfredo and bacon pasta made under 25 minutes is a great family cum kid friendly dinner that comes with delicious alfredo sauce, sun-dried tomato, shredded chicken and of course smoky bacon.

Ingredients

  • 1 1/2 cup cooked chicken, shredded (or any rotisserie chicken)
  • 10.5 ounces penne pasta (about 300g)
  • 1 1/4 cups heavy cream (or half and half)
  • 2 tbsp butter, unsalted
  • 5 ounces streaky bacon, chopped (about 150g)
  • 1/2 cup grated parmesan cheese, plus extra to serve
  • 3/4 cup sundried tomato, sliced
  • 1 tsp minced garlic
  • Fresh basil, chopped (one handful)
  • Salt & pepper, to taste

Instructions

  1. Heat a pot, add water once it starts to boil, add pasta and cook until al dente or as per the package instructions.
  2. After its done, strain the pasta and set aside. (Don't drain the pasta water we will use it later)
  3. Heat a pan over medium high heat, add bacon and fry until crispy. Drain excess fat/oil if too much.
  4. Add sun-dried tomatoes and minced garlic stir fry for about a minute or so. Add the butter and let it melt. Keep stiring in between.
  5. Reduce heat to low and add cream and let it simmer for a minute until it just starts to thicken up, now add parmesan, basil, salt, and pepper. Stir to combine.
  6. Once the sauce has thickened up, add cooked pasta and toss well with the sauce. Add the chicken and simmer for a few minutes.
  7. Keep stirring throughout and add pasta water if the sauce becomes too thick.
  8. Done! Garnish with extra parmesan and basil and serve immediately.
