Chicken Enchiladas: Easy Chicken Enchiladas for Busy Weeknights

Chicken Enchiladas: If you want to feed a crowd then this Easy Chicken Enchiladas dish is for you. It only requires a few ingredients like chicken, corn tortillas, green chiles, cheese, sour cream, salt, pepper and mainly enchilada sauce. To maximize the flavor inside warmed flour tortillas the chicken meat is sauteed, shredded and tossed in spices.

The main ingredients in Chicken Enchiladas is the enchilada sauce which is usually made with a tomato based sauce, chicken broth chipotle peppers and seasonings to coat each serving.

How to make your Chicken Shredded?

To shred the meat, I usually use my slow cooker, I put my chicken breasts with a cup of green salsa, and cook on low for 6 hours. Then, by using one fork hold the chicken steady and the other fork to shred the chicken. That’s it you’ll have your shredded chicken ready! You can make it with fresh chicken breasts or you can use a rotisserie chicken or leftover chicken. These Easy Chicken Enchiladas start with cooked, shredded chicken.

How to Make Chicken Enchiladas?

  • Combine chicken, green chiles, 1 cup cheese, salt and pepper in a small bowl.
  • Bring enchilada sauce to boil in a small skillet, and then remove from heat.
  • To soften your tortilla dip them into the heated sauce for a few seconds.
  • Spoon 2 tablespoons sour cream and 1/3 cup of chicken mixture on the center of each tortilla.
  • Roll your tortilla and place seam-side on a baking dish (9×9).
  • Over the top, pour remaining heated enchilada sauce. Sprinkle with remaining 1 cup cheese and Bake at 350 degrees F for 20 minutes.

What to use between Corn Tortillas or Flour Tortillas to make your Chicken Enchiladas?

To make it more traditional I use corn tortillas but you can also substitute it with flour tortillas. but to make it healthier I always recommend using corn tortillas. The chicken is combined with spices, green chiles, and cheese, then rolled up with sour cream into the tortillas.

How to Soften the Tortillas

If you didn’t make your tortillas soft then it will have a tendency to crack which will totally mess up your entire dish. So what to do to make it soft here it is… Firstly, you can wrap it in a towel and steam in the microwave for 10-15 minutes. Or, you can dip the tortillas in hot olive oil to soften, and before rolling into enchiladas dip into enchilada sauce. or, finally, I highly advise you to use a store brought tortillas.

What to serve with Chicken Enchiladas?

I personally like to serve my Chicken Enchiladas with Cilantro Lime Rice or simple yellow rice. You can also serve it with Mexican Cauliflower Rice to make it lower in carbs. or maybe Cilantro-Lime Cauliflower “Rice” if you prefer.

How to make Chicken Enchiladas more Delicious?

To make your Chicken Enchiladas delicious make sure to sprinkle a blend of Monterey Jack cheeses and cheddar on top, bake the dish until the cheese is bubbly and hot. For a busy weekend, It’s a perfectly satisfying meal that can be prepped ahead of time. It’s also a great recipe for those who are stocking up on freezer meals.

Ingredients

  • 1/2 teaspoon dried oregano
  • 4 skinless, boneless chicken breast halves
  • 1 cup shredded Cheddar cheese
  • 1 onion, chopped
  • 1/2 pint sour cream
  • 1/2 teaspoon salt (optional)
  • 1 tablespoon dried parsley
  • 1 (15 ounce) can tomato sauce
  • 1/2 teaspoon ground black pepper
  • 1/3 cup chopped green bell pepper
  • 1 (12 ounce) jar taco sauce
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 3/4 cup shredded Cheddar cheese
  • 1 clove garlic, minced
  • 8 (10 inch) flour tortillas

Instructions

  1. Preheat oven to 175 degrees C (350 F).
  2. Over medium heat, cook the chicken in a medium skillet until juices run clear and no longer pink from the center.
  3. Cut the chicken in cubes and return it to the skillet make sure to Drain excess fat before.
  4. Add the sour cream, Cheddar cheese, onion, parsley, oregano and ground black pepper. Heat until cheese melts.
  5. Stir in tomato sauce, salt, water, green pepper, chili powder, and garlic.
  6. Roll your tortillas with even amounts of the mixture and arrange in a 9x9 or 8x8 inch baking dish.
  7. Cover with 3/4 cup Cheddar cheese and taco sauce.
  8. Bake at 350 degrees F uncovered for 20 minutes. Let stand for 10 minutes before serving.
