For the chicken
- 2 pounds chicken thighs, boneless, skinless
- 1 cup Frank's RedHot sauce
- 1 tablespoon brown sugar
- 2 teaspoons paprika
- 1/4 teaspoon cayenne
- 2 tablespoons butter, unsalted
- 2 celery ribs, diced
- 2 tomatoes, seeded and diced
- 2 medium carrots, diced
- Salt and ground black pepper
- 1 tablespoon cooking oil
- 2-4 hoagie rolls, toasted
- 1 cup blue cheese crumbles
Homemade dressing
- 1/4 teaspoon Dijon mustard
- 1 1/2 cups mayonnaise
- 1 teaspoon minced garlic
- 1/2 teaspoon fresh dill, minced
- 1/2 cup buttermilk
- 1/2 teaspoon honey
- 1/8 teaspoon ground black pepper
- 1/3 teaspoon salt
Instructions
- Preheat oven to 425 degrees F.
- Season chicken with cayenne, brown sugar, paprika, salt and pepper.
- Heat a skillet over medium-high heat. Add the vegetable oil. Add the chicken and sear on both sides for about 4 minutes until golden.
- Add in the wing sauce, mix well bring to a simmer, and cook for about 15 minutes.
- Let it cool, and shred the chicken with two forks. Add the melted butter place the skillet into the oven and broil for about 4 minutes or until crusty and caramelized on top.
- In a bowl, add celery, carrots, and tomatoes, season with salt and pepper. Mix until well combined.
- Cut the bread horizontally. Layer with blue cheese crumbles on the bottom, then add the chicken followed by the veggies.
- Homemade Ranch Dressing: In a bowl mix the buttermilk, garlic, mayonnaise, salt, mustard dill, honey, and pepper.
