Ingredients

For the Chicken:

  • 1 lb chicken breasts, boneless
  • 1/4 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp chili powder
  • 2 tbsp extra virgin olive oil, divided
  • salt and pepper

For the Rice:

  • 1 1/2 cups long grain rice (or blend of two)
  • 1 tsp garlic salt
  • 1 tbsp butter
  • 1 tsp cumin
  • 1 3/4 cup chicken broth, low sodium
  • 1 cup mild salsa, plus extra for serving
  • 1 lemon, juiced
  • 15 oz pinto beans, drained
  • 1 avocado, sliced
  • 2 tbsp organic green onions, diced
  • 1 1/2 cups Jack cheese, shredded

Instructions

  1. Season chicken with cumin, chili powder, garlic powder, salt and pepper.

  6. Remove the lid and add the shredded cheese. Place the lid cover back and let the cheese melt.
  7. Top with diced green onions, extra salsa, and sliced avocado.
