Ingredients

  • 4 cups chopped cooked chicken breast (about 1 1/2 pounds)
  • 1 tablespoon unsalted butter
  • Cooking spray
  • 3 (8-ounce) packages presliced mushrooms
  • 1/2 cup dry sherry
  • 3/4 teaspoon freshly ground black pepper
  • 1 cup finely chopped onion
  • 2/3 cup finely chopped celery
  • 1/4 teaspoon salt
  • 2 1/4 cups (9 ounces) grated fresh Parmesan cheese, divided
  • 1/2 cup (4 ounces) less-fat cream cheese
  • 3 ounces all-purpose flour (about 2/3 cup)
  • 3 (14.5-ounce) cans fat-free, less-sodium chicken broth
  • 1 1/2 cups shredded mozzarella cheese
  • 1 pound cooked pasta

Instructions

  1. Preheat oven to 350° F.
  2. Take a large stockpot and melt butter over medium-high heat. Add onion, mushrooms, black pepper, celery, salt and sauté until mushrooms are tender for about 4 minutes. Add sherry and cook for 1 minute.
  3. Gradually add flour to pan, stirring constantly with a whisk and cook 3 minutes. Add broth and bring to a boil. Reduce heat and simmer for 5 minutes, stirring frequently. Remove from heat.
  4. Add 1 ¾ cups cream cheese and Parmesan cheese, stirring until cream cheese melts. Add pasta and chicken; stir until blended.
  5. Take 2 (8-inch-square) glass baking dishes coat with cooking spray and divide the pasta mixture.
  6. Sprinkle the top generously with shredded mozzarella cheese
  7. Bake for 30 minutes at 350° until lightly browned and bubbly. Remove casserole from oven and let stand 15 minutes.
  8. Serve!
