Ingredients
- 5 pounds, whole chicken, curry-sized cut
- 1/4 cup coriander leaves
- 1/4 cup parsley
- 1-2 wiri wiri pepper, optional
- 1 teaspoon garlic powder
- 1 tablespoon onion powder
- 2 scallions
- 1 teaspoon salt
- 6 cloves garlic
- 1 yellow onion
- 1/4 teaspoon garam masala
- 1/4 teaspoon paprika
- 1 1/2 cup water
- 1/4 cup oil
- 1/4 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 3 tablespoons yellow curry powder
- 1 bay leaf
- 2 teaspoons roasted ground cumin
- 1 teaspoon ground mustard
- 1 lb russet potatoes, peeled and diced
Instructions
- In a large mixing bowl, add the chicken, garlic, onion powder, and salt. Mix well and set aside.
- In a food processor, add onion, wiri wiri peppers, garlic, scallions, coriander, and parsley. Add 1/2 cup of water and blend until smooth.
- In a mixing bowl, add the blended herbs, ground turmeric, garam masala, curry powder, ground coriander, roasted cumin, paprika, and ground mustard. Add a little more water and mix to form a paste.
- Heat a large pot over high heat. Add the oil, add the curry paste, and stir cook for about 5 minutes or until the raw flavors go out.
- Add the seasoned chicken and give it a good mix until well combined with the curry paste.
- Cook for about 5 minutes, stirring occasionally. Reduce heat to medium, add 1/2 cup of warm water, and simmer cook for about 10 minutes covered.
- Add the diced potatoes, mix well, and cook for another 3-5 minutes. When the liquid thickens a bit, increase the heat, add 1 cup of water, cover, and cook for about 20 minutes, stirring often or until the chicken is cooked and the potatoes are tender.
- Serve immediately over warm basmati rice or roti.
