Ingredients

  • 2 lb chicken breasts, boneless skinless
  • 1 bag pork rinds, original flavored
  • 1 cup parmesan cheese, shredded
  • 1 teaspoon garlic powder
  • 2 sprigs fresh rosemary, minced
  • 3 sprigs fresh thyme, minced
  • 1 cup heavy whipping cream
  • 1 egg, beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper ground
  • Extra virgin olive oil for frying

Instructions

  1. Crush the pork rinds in a food processor until well crushed with the same consistency.
  2. Take 2 pieces of parchment paper, place each chicken breast, and pound to the same thickness (all sides) using a meat pounder.
  3. In a shallow pan or baking dish(9x13), add crushed pork rinds, garlic powder, salt, pepper, parmesan cheese, and fresh herbs. Combined well.
  4. In another shallow pan add the beaten egg and heavy whipping cream. Mix well.
  5. Now take one chicken breast at a time, add to the egg bowl then to the pork breading mixture. Coat the chicken very well all over the chicken and continue this same breading process for the remaining chicken breasts.
  6. Heat a skillet or frying pan on medium heat. Add olive oil.
  7. Once the oil is hot, add the breaded chicken to the skillet and fry for about 4-6 minutes, flip the chicken, cover the lid and cook for another 6-8 minutes until nicely golden browned or until internal temperature reaches 165 when checked with the meat thermometer.
