Ingredients

  • 2 teaspoons Italian seasoning
  • 4 chicken breasts, boneless, skinless
  • 1 teaspoon black pepper
  • 1 teaspoon salt and pepper
  • 2 tablespoons butter, divided
  • 1/2 cup chicken broth or cooking wine
  • 2 cups cherry tomatoes, sliced
  • 1 tablespoon balsamic vinegar + more for drizzling
  • 4 ounces fresh mozzarella cheese
  • 1/4 cup fresh basil

Instructions

  1. Preheat oven to 350 degrees F.
  2. In a medium bowl, place the chicken and season with Italian seasoning, salt and pepper.
  3. Heat up a large skillet over medium heat. Add 1 tablespoon butter, once melted, add the seasoned chicken and cook for about 2-3 minutes on each side.
  4. Remove the chicken from the skillet and set aside
  5. Add the chicken broth to deglaze the pan. Scrape up any brown bits from the bottom of the pan and bring the broth to a simmer.
  6. Cook for about 5-6 minutes until reduced by half. Stir in the remaining tablespoon of butter and balsamic glaze.
  7. Add the chicken back to the pan, and fully coat with balsamic glaze. Add in the cherry tomatoes and top the chicken with the fresh mozzarella.
  8. Place the skillet in the oven and bake for about 20 minutes or until the internal temperature of the chicken has reached 165 degrees F when checked with the meat thermometer.
  9. Top with additional balsamic glaze and fresh basil.
