What Type of Chicken to Use?

In this recipe, I am using raw cubed chicken breast and frying them directly into the pan. But you can also use cooked cubed or shredded chicken. (if you ask me I prefer the fried version).

And more thing, use chicken thighs if you don’t have chicken breasts in hand.

How to Make Keto Chicken Alfredo Bake Sauce?

Here how you can make the delicious alfredo sauce (for the measurements see the recipe card below)

Ingredients

  • Butter
  • Heavy whipping cream
  • Cream cheese
  • Garlic, minced
  • Garlic powder
  • Italian seasoning
  • Salt and Pepper
  • Parmesan cheese

Directions

  1. Heat a pan over medium heat and add butter, cream cheese, and heavy whipping cream and whisk until melted and well combined.
  2. Add in garlic powder, minced garlic, Italian seasoning, and salt and pepper. Combine until smooth.
  3. Add parmesan cheese, bring the sauce to a boil and simmer on low for about 3-5 minutes.
  4. Remove from heat and set aside.

Can We Store the Leftover Low Carb Chicken Alfredo Casserole?

You can store the leftover chicken in an airtight container and store in the refrigerator for up to 3-4 days. You can also freeze the casserole but you may notice the change in the texture and sauce will not be as creamy.

When you are ready to eat, reheat in the preheated oven of 350 degrees or until warmed through (make sure to wrap the pan in aluminum foil). If the sauce becomes too thick then add tiny splashes of milk. You can also put it in the microwave and reheat until warmed through.

Important Tips

  • You can also make this yummy low carb chicken alfredo bake by substituting few vegetables like – use cauliflower or broccoli or even shredded cabbage instead of mushrooms and leeks.
  • Try adding onion powder, a little nutmeg, and herbs de Provence for the seasonings. (Believe me, it will be so delicious!!)

Ingredients

  • 1 pound chicken breast, cubed, skinless, boneless
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1/2 tsp Italian herb seasoning
  • 2 clove garlic, minced
  • 2 cup spinach, chopped
  • 2 cup mushrooms, pieces or slices
  • ½ cup cream cheese
  • 1-1/2 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • Salt and pepper, or to taste
  • 2 tbsp parsley, fresh

Instructions

  1. Preheat oven to 390 degrees.
  2. Heat a large frying pan over medium heat. Add olive oil.
  3. Add the chicken and fry for a few minutes or until cooked through and browned.
  4. Remove from the pan and place them into the baking dish. Set aside.
  5. Add in the butter to the pan and let it melt. Add mushrooms, spinach, and minced garlic and cook for 4-5 minutes or until tender.
  6. Now add the cream cheese and stir until melted. Pour the heavy cream, add the Italian seasoning, salt, and pepper.
  7. Bring the sauce to a boil and simmer for 5-6 minutes or until the sauce reduces and thickens.
  8. Pour the sauce all over the chicken into the baking dish and top with the grated parmesan cheese.
  9. Bake in the preheated oven for about 15-20 minutes or until hot and bubbly.
  10. Garnish with fresh parsley and serve with your favorite low carb veggies or over cauliflower rice.
