Ingredients

  • 2 pounds chicken breasts, boneless, skinless (about 4 large chicken breasts)
  • 4 ham slices
  • 16 slices Swiss cheese
  • Salt and black pepper
  • 1 1/2 cups pork rinds, crushed (or half almond flour and parmesan)
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 large egg
  • Avocado oil, for frying

Sauce

  • 1 cup heavy cream
  • 1 tablespoon butter
  • 1 tablespoon Dijon mustard
  • 3/4 cup parmesan cheese, grated
  • 1/3 cup chicken stock
  • 1 tablespoon chopped fresh parsley
  • Salt and black pepper, to taste

Instructions

  1. Pound the chicken breasts with a pounder until they are about 1/4 inch thick.
  2. Season with salt and pepper on both sides.
  3. Take each chicken breast at a time, place two slices of swiss cheese then a slice of ham, and then again two more swiss cheese slices.
  4. Tightly fold the chicken breast and place the wrapped slide down on until it stays in its shape. Refrigerate for 15-30 minutes (optional)
  5. In a shallow bowl, add pork rinds, garlic, and onion powder and combine well.
  6. In another bowl, beat the egg and whisk with a fork.
  7. First, dip the folded chicken breast into the egg mixture bowl then to the pork rinds bowl. Do the same for the remaining chicken pieces.
  8. Heat a skillet over medium-high heat, add 1/2 inch of oil.
  9. Once hot, add the breaded chicken breasts and fry for 8-10 minutes or until brown on all sides, flipping halfway through.
  10. Remove each chicken breast and place it on a paper towel-lined plate.
  11. Let's make the sauce - combine all the sauce ingredients in a small bowl and mix well.
  12. Heat a pan, add the mixture and stir. Add salt and pepper, bring the sauce to a boil and simmer for 5 to 10 minutes, or until the sauce thickens
  13. Slice each chicken breast into 4 pieces and top with the sauce and served it with roasted broccoli or mashed cauliflower.
