I have used chicken thighs but you can use chicken tenders or chicken breast if you prefer. (Chicken thighs are recommended because they will turn out more juicy)

This low carb keto lemon chicken can be made in just 20 minutes that consist of tender and juicy chicken pieces and a delicious creamy sauce. It's a complete one pan meal that your family will love on busy weeknights.

Ingredients

  • 1 pound chicken thighs, boneless, skinless
  • 1 teaspoon dried basil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 3/4 cup grated parmesan cheese, divided
  • zest of 1/2 lemon
  • salt and fresh ground pepper, to taste
  • 2 tablespoons butter, divided
  • 1 tablespoon extra virgin olive oil
  • 3 cloves garlic, minced
  • 2/3 cup chicken broth, low sodium
  • 1 cup heavy cream
  • 2 tablespoons lemon juice, (or as per your taste)

For garnishing

  • Fresh parsley, chopped
  • Lemon slices

Instructions

  1. In a bowl combine basil, thyme, garlic powder, lemon zest, 1/3-cup parmesan cheese, salt, and pepper. Mix well.
  2. Take another bowl, add little olive oil and the seasoning, mix them. Add the chicken pieces to the bowl and rub the seasoning all around the chicken.
  3. Heat a large skillet over medium-high heat; add oil, 1 tablespoon butter. Once hot, add the chicken and sear for about 5 minutes until golden. Flip the chicken and cook for 5 more minutes.
  4. Remove chicken from the skillet. Set aside.
  5. Melt the remaining butter. Add garlic, lower the heat to medium and cook for 15-20 seconds
  6. Pour in the chicken broth, cream, and the remaining Parmesan cheese. Whisk well.
  7. Season with more salt and pepper, if desired, and stir to combine.Cook for 2-3 minutes, or until the sauce thickened.
  8. Add in the lemon juice and cook for another 1 minute.
  9. Return the chicken into the skillet and simmer with the sauce for 2 to 3 minutes or until heated through.
  10. Done! Garnish with chopped parsley and lemon slices.
  11. Serve hot.
