- 1 (10-ounce) pepperoni stick, cut into small cubes
- 1 tbsp olive oil
- 2 minced garlic cloves
- 1 tsp Italian seasoning
- 12 baby bella mushrooms
- 1 (28-ounce) can crushed tomatoes
- 24 mozzarella slices
- Salt and freshly ground black pepper
- Nonstick cooking spray
- All-purpose flour, for rolling
- 1 pound pizza dough, store-bought
- 2 tbsp butter, unsalted, melted
Instructions
- Heat a pan over medium heat. Add oil, once hot, add the pepperoni (casing removed) and saute for about 10 minutes or until slightly caramelized.
- Add the seasoning and minced garlic and saute for 10 seconds. Add the crushed tomatoes and salt pepper, stir well, and simmer for about 15 minutes. Once done, set aside and cool completely.
- Preheat the oven to 400 degrees F with a rack in a lower position.
- Take oven-proof bowls, and lightly spray with nonstick spray.
- Layer the cheese slices inside each bowl (6 slices in each bowl). Add 3 mushrooms on top of the cheese.
- Pour in 1/2 cup pepperoni sauce over the mushrooms.
- Take the dough and split it into 4 equal portions and roll each portion into 6- to 8-inch rounds.
- Cover the bowl with a round dough, overhang some part of the dough outside edges of the bowls, and seal.
- Place the bowls on a sheet pan and bake for 15 minutes or until the crust is slightly golden. Cool down for about minutes.
- Brush with melted butter on the top of each bowl. Gently turn the bowl upside down into a plate. With the help of a spoon handle to separate the crust from the bowl.
- Repeat the same for the remaining pot pies.
- Serve immediately and enjoy the long cheese pull.
