You just need to add the chicken, seasonings to prep in the bag, Vaccum seal it, keep them in the fridge or freezer and you are good to go.

Place the vacuum-sealed chicken breast to the water bath for an hour or so and you are ready!

How long and what temperature do you sous vide chicken breast?

As per my experience 2 to 3 hours is the perfect cooking time and for the temperature, 145 -150F seems to be the most recommended one but it all comes down to your preference to get the best balance of texture and juiciness.

Vacuum Sealer Substitute?

No worries if you don’t have a vacuum sealer! You can still make this recipe very delicious. Here’s what you can do:

  • Take a Ziploc bag and place all the ingredients and seal halfway on the top.
  • Heat water with the precision cooker as per manufacturer’s instructions.
  • Slowly lower the bag into the water and you will see the bag will remove the air out and it will seal up around the food.
  • Now completely submerge and seal the bag. It should sink, not float. And you are done!

Cook Time 3 hours
Total Time 3 hours 10 minutes

Ingredients

  • 4 (4 ounces) skinless, boneless chicken breast halves
  • 2 teaspoons herbes de Provence
  • 1 tablespoon olive oil
  • 4 strips lemon zest
  • 1/2 teaspoon salt
  • 2 teaspoons garlic paste
  • 1 medium sous vide vacuum bag

Instructions

  1. Set up a water bath and immersion cooker according to manufacturer's instructions.
  2. Bring water to 143F / 62 C.
  3. In a bowl add chicken, herbes de Provence, oil, garlic paste, lemon zest and salt and mix until well coated.
  4. Place in the vacuum bag in a single layer and seal.
  5. Submerge the sealed bag into the water and cook for 3 hours.
  6. Once cooked remove the bag and let it rest for about 5-10 minutes.
  7. Remove the chicken from the bag and dice it.
  8. Enjoy!
