- 1 tsp garlic powder
- ½ tsp black pepper
- 2 tsp dark soy sauce
- 2 tsp fish sauce
- ½ tsp salt
- 1 tsp sugar
For the filling
- 1lb ground pork
- 6 green onions chopped
- 20 g glass noodles, soaked and chopped
- 2 dried shiitake mushrooms, soaked in hot water until soft
- 1/3 cup shallot chopped
- 4 minced garlic cloves
- 1 carrot shredded
- ½ tsp salt
- 2 tsp black pepper
- 2 tbsp oyster sauce
For the sweet chili sauce
- 2 red Fresno chili, deseeded and chopped
- 6 cloves garlic
- 1 red Thai chili
- ⅓ cup water
- 3/4 cup white vinegar
- 1 cup sugar
- 1 tsp salt
- 1 tsp fish sauce
- 1 Tbsp cornstarch slurry

Instructions
For the sauce
- Add garlic, chopped Fresno, and Thai chili pepper in a food processor. Pulse until finely chopped.
- Heat a pot over medium heat, add the vinegar, pulsed peppers, sugar, water, and salt. Simmer and cook for about 2 minutes. Add in the cornstarch slurry, bring to a boil, and cook for a minute or until thick.
- Add in fish sauce and turn off the heat. Stir well, cool completely, and store in a glass jar.
