These low carb keto buffalo chicken meatballs are a great crowd-pleasing appetizer and ultimate comfort food that is low carb, gluten-free and keto-friendly, contains only 4 g of carbs that your whole family will love.

Easy Keto Buffalo Chicken Meatballs
– 1 pound chicken, grounded – 1 cup buffalo wing sauce – 1 egg, beaten – 1 tablespoon almond flour or coconut flour – 2 sprigs of green onion, finely chopped
– 1 celery stalk, trimmed and finely diced – 1 tsp onion powder – 1 tsp garlic powder – 1 tablespoon mayonnaise – 1 tsp ground black pepper – 1 tsp pink sea salt – Cooking spray
Preheat the oven to 400 degrees. Lightly grease the sheet pan with cooking spray or with olive oil or butter. Take a large bowl, combine ground chicken, mayonnaise, garlic powder, onion powder, diced celery, chopped onion, salt, and pepper. Mix well until well combined.
Use an ice scoop or your hands to form balls (about 2″) from the meat mixture. (dust your palms with little flour if it's too sticky). Place them on a sheet pan and bake for about 15-20 minutes or until the internal temperature reaches 165 (check using a meat thermometer).
Remove from the oven and set aside. Heat a skillet over medium heat. Add the meatballs, pour in the buffalo wing sauce, coat well the sauce and cook until sauce is warmed through. Done! Garnish with chopped green onions and serve hot with a drizzle of ranch dressing or over pureed cauliflower mixed with ranch seasoning.
Look, I use my hands to form balls, just dust your both palms with the flour and start making the balls and they won’t stick to your palms. Alternatively, you can use a cookie scoop or ice cream scoop with the lever to release.
– Form meatballs from the meat mixture – Place them in the bottom of the crockpot – Pour the sauce all over the top. – Cook on low for about 3 hours. – Done!
I like to serve it with mashed cauliflower mixed with ranch seasoning, or with homemade ranch dressing or cucumber salad. You can also make them with blue cheese and serve with avocado ranch dressing.
