This low carb keto sweet and sour chicken is the classic Chinese dish that can be made in just 15 minutes that consist of tender chicken pieces smothered in sweet-savory sauce.

Easy Keto Sweet And Sour Chicken
For the chicken: 1 pound chicken thighs, boneless, skinless cut into bite-sized pieces 2 large eggs 1/4 teaspoon black pepper 1 1/2 cups parmesan cheese, powdered 1 cup avocado oil, for frying
For the sauce: – 1 tablespoon tamari sauce – 1/3 cup swerve sweetener – 1/4 cup tomato sauce, sugar-free (or tomato paste) – 1/3 cup rice wine vinegar – 1 teaspoon garlic powder – 1/8 teaspoon ginger, fresh grated – 1/4 cup water – 1/2 teaspoon xanthan gum, optional (or guar gum) For garnishing: – Scallions, sliced
Ingredients
For the sauce:
Heat a saucepan over medium heat and add in all the sauce ingredients except xanthan gum; stir well to combine.
Bring the mixture to a boil, add in the xanthan gum and boil for 2-3 minutes, stirring occasionally or until the sauce thickens. Remove from the heat and set aside to completely cool.
For the chicken: Heat a cast-iron skillet over medium heat, add oil and let it become hot. Take two shallow bowls and beat the eggs into the first one and combine the powdered parmesan and pepper to the other.
Firstly, dip a chicken into the egg mixture then to cheese mixture and coat well. Repeat for the remaining pieces. When the oil is hot and ready to fry, add the chicken and fry for about 5 minutes (make sure not to overcrowd the skillet) or until cooked through and browned.
Fry the chicken in batches and set aside. Baste the chicken with the sauce and serve immediately over cauliflower rice and garnish with scallions.
You can use pork rinds or blanched almond flour instead of powdered parmesan cheese. Fry the chicken in batches and do not overcrowd the pan or else chicken will not get crispy. You can use coconut aminos or liquid aminos if you’re soy-free or use gluten free soy sauce instead of tamari.
